Avocado Chimichurri

This avocado chimichurri is so creamy, fresh, and delicious. Perfect on some beautifal grilled steak.

Ingredients

  • 1 avocado, diced
  • 1 cup parsley, finely chopped
  • 1 cup cilantro, finely chopped
  • 1-2 tsp red pepper chili flakes
  • good pinch of salt, I use flaky
  • 2-3 cloves garlic, finely minced
  • 2 tbsp red wine vinegar
  • 1/3 cup extra virgin olive oil

Instructions

  1. Chop the herbs, finely mince the garlic, and dice the avocado.
  2. Combine all of the ingredients in a bowl along with the seasonings, oil, and vinegar.
  3. Top it on cooked sliced steak. Enjoy!
