Cheesy Brazillian Bread

Brazilian Cheese Bread is a gluten-free, chewy bread roll made with tapioca flour and cheese. Crisp on the outside and soft on the inside, these bites are perfect for snacking or serving as a warm appetizer.
Ingredients
- 1 egg
- 1/3 cup extra virgin olive oil
- 2/3 cup milk, I am using 2%
- 1 1/2 cup tapioca starch
- pinch salt
- 1/2 cup shredded cheese, I am using freshly grated white cheddar
- oil spray
Instructions
- Preheat oven to 400F and set a mini muffin tin aside coated in some oil spray.
- To a blender, crack in one egg, add oil, milk, tapioca starch, salt and blend until smooth.
- Once blended, add freshly grated cheese and blend again for a few seconds. Do not over blend the cheese. Blend five seconds or so.
- Pour the batter into the prepared mini muffin tin sprayed with oil, about 2/3 ways full.
- Bake these for about 20 minutes. Until puffed up and slightly golden.
- Cool for a few min and then enjoy!
