Easy Cheesy Chicken Fritters

These simple cheesy chicken fritters are perfect for an easy weeknight meal. They are kid-friendly and absolutely delicious. Pair with your favorite sides for a full nourishing meal.
Ingredients
- 2 small or 1 large chicken breast, diced into small cubes (the smaller the better)
- 1 egg
- 1 tbsp avocado oil mayo
- 1/2 cup shredded cheddar cheese
- few cracks of black pepper
- 1 tsp each, smoked paprika, onion powder, garlic powder
- generous pinch of salt
- 1.5 tbsp all-purpose GF or regular flour
- 1 tbsp tapioca or arrowroot starch (optional) , if not using then just do an additional 1/2-1 tbsp of flour
- olive oil for cooking
Garlic Sauce
- 1 tbsp mayo
- 2 tbsp ketchup
- 1-2 cloves garlic, finely minced
Instructions
- Start by cutting chicken into small dices and add it to a large mixing bowl.
- Crack in one egg, add mayo, shredded cheese, and spices. Give it a good mix.
- Then add in the gf flour and starch, mix well.
- Heat some oil in a large frying pan on medium heat. Using a cookie scoop or hands make little balls with the chicken mixture and transfer to the pan making equal size fritters. Flatten them out a little.
- Cook for about 3-4 minutes per side until both sides are golden brown and internal temp reaches at least 165F.
- Enjoy with the garlic sauce or you can just have them with ketchup or as is. They go great with roasted potatoes. Enjoy!
