These crepes are a delicious breakfast idea that is higher in protein and super easy to make. Top or fill with your favorite fruit or spread and enjoy.

Ingredients

  • 1 egg
  • 1 cup milk of choice
  • 2 tbsp full or low-fat cottage cheese
  • 1 tsp pure vanilla extract
  • 2 tbsp pure maple syrup
  • 1/2 tsp cinnamon
  • 1/2 ripe banana
  • 1/3 cup gluten-free all purpose flour
  • Pinch of salt

Instructions

  1. To a blender, add all of the wet and dry ingredients. Blend until a smooth, creamy and thin crepe batter forms.
  2. Heat crepe pan on medium heat.
  3. Once hot transfer, directly from the blender or using a 1/3 measuring cup, pour batter onto the pan and swirl around making a thin crepe. Do this slowly. Do not make it too thick.
  4. Cook until edges are crispy. Gently flip and cook on the other side. This may take some trial and error.
  5. Enjoy with powdered sugar, berries, maple syrup, jam, etc.
