Gluten-Free Jam Pancake Donuts

Gluten-Free Jam Pancake Donuts

These pancake donuts are spongy, soft, and so easy to make.

Ingredients

  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup milk of choice
  • 1/4 cup pure maple syrup
  • 1 cup gluten-free all purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • About 1/4 cup jam of choice, I did strawberry and mixed berry

Instructions

  1. Preheat oven to 350F and set a donut pan aside. I am using silicone one here.
  2. To a mixing bowl, add eggs, vanilla, milk, maple syrup and whisk.
  3. Then, add flour, baking powder, and salt. Mix to form a pancake batter.
  4. Pour batter into the donut pan making 6 even donuts.
  5. Scoop the jam onto the pancake batter. Does not have to be perfect here.
  6. Bake for 18-20 minutes, until donuts are golden and firm to the touch.
  7. Dust with powdered sugar, optional. Enjoy!
