Gluten-Free Jam Pancake Donuts

These pancake donuts are spongy, soft, and so easy to make.
Ingredients
- 2 eggs
- 1 tsp pure vanilla extract
- 1/2 cup milk of choice
- 1/4 cup pure maple syrup
- 1 cup gluten-free all purpose flour
- 1 tsp baking powder
- Pinch of salt
- About 1/4 cup jam of choice, I did strawberry and mixed berry
Instructions
- Preheat oven to 350F and set a donut pan aside. I am using silicone one here.
- To a mixing bowl, add eggs, vanilla, milk, maple syrup and whisk.
- Then, add flour, baking powder, and salt. Mix to form a pancake batter.
- Pour batter into the donut pan making 6 even donuts.
- Scoop the jam onto the pancake batter. Does not have to be perfect here.
- Bake for 18-20 minutes, until donuts are golden and firm to the touch.
- Dust with powdered sugar, optional. Enjoy!
