Ingredients
- 1 lb. ground chicken
- 1 egg
- 3 tbsp. almond flour mixed with a touch of water. You can also just do 1/4 cup of plain breadcrumbs here. (See Notes)
- half of an onion, finely diced
- 2-3 cloves of garlic, finely minced
- handful of parsley, finely chopped
- 3 tbsp. ranch seasoning mix
- extra virgin olive oil for cooking
Instructions
- Into a bowl, add all of your ingredients minus the oil for cooking. Mix thoroughly until all is combined.
- Heat olive oil in a large pan on medium heat.
- Once hot, using a cookie scoop or by hands, form patties and transfer them into the hot pan. All six should fit into one large pan, otherwise cook in batches.
- Cook for about 3-4 minutes per side until golden on both sides and chicken is cooked through. Internal temp should be at least 165F. Do not over cook as this will dramatically dry out your patties.
- Serve these with a bun, ranch, bacon, cheese, you name it! Enjoy :)
Notes:
- If using the almond flour and water mixture instead of regular breadcrumbs, make sure you let the almond flour sit for 2-3 minutes to hydrate well.
