Perfectly sweet waffle, topped with a delicious cinnamon sugar crunch topping, these waffles are it! They are gluten, dairy, and refined sugar free. Make these into mini waffles (like I did) or large size Belgian waffles. Which ever way you chose, I guarantee you will love them!

what you will need to make these

The ingredient list for these waffles is pretty short and simple.

  • pasture raised eggs. I always use pasture raised for its higher nutritional profile

  • vanilla extract

  • pure maple syrup

  • almond milk. Sub with oat, coconut, cashew, etc.

  • gluten free oat flour. Sub this with regular oat flour for not gluten free

  • baking powder

  • pinch of salt

  • cinnamon

  • melted coconut oil

  • coconut sugar

tips to make these amazing

  • When making the cinnamon swirl, make sure you get a perfectly creamy consistency. Not too runny and not too thick. Adjust the cinnamon sugar and plant-milk accordingly.

  • Pair these waffles with maple butter, maple syrup, jam, or eat it plain. It is amazing either way.

Oat Flour Cinnamon Roll Waffles w/ a Cinnamon Sugar Crunch Topping

These perfectly sweet cinnamon roll waffles are gluten free, dairy free, and absolutely delicious. They are topped with a delicious cinnamon sugar crunch topping that definitely takes these up a notch.

Ingredients

  • 2 pasture raised eggs 
  • 1 tsp. vanilla extract 
  • 2 tbsp. pure maple syrup 
  • 2 tbsp. almond milk or other plant-based milk of choice
  • 1 cup gluten free oat flour 
  • 1 tsp. baking powder
  • pinch of salt
  • 1 tsp. cinnamon
Cinnamon Swirl
  • 2 tbsp. coconut sugar
  • 1 tsp. cinnamon
  • 1-2 tbsp. plant-milk of choice
Cinnamon Sugar Crunch
  • 2 tbsp. coconut sugar
  • 1 tsp. cinnamon
  • 1/2 tbsp. melted coconut oil 

Instructions

  1. In a bowl, whisk together eggs, vanilla, maple syrup, and milk. 
  2. Add in the oat flour, baking powder, salt, and cinnamon. Whisk to combine. 
  3. In a separate bowl, make cinnamon swirl by combining coconut sugar, cinnamon, and plant milk until a creamy consistency forms. If it is too runny then add some more coconut sugar. If too thick, add more plant-milk. Adjust accordingly. You want this to be a thin creamy like consistency. 
  4. Using a waffle iron, spray it with some non stick spray. Pour waffle batter in the middle. Pour on some cinnamon swirl and cook. 
  5. Make cinnamon sugar crunch by combining coconut sugar, cinnamon, and melted coconut oil until a thick wet sand consistency forms. Set aside. 
  6. Once waffle is done, carefully remove it onto a plate. Add some cinnamon sugar crunch, maple butter or syrup and dig in!
