Crumbly, low carb, slightly sweet shortbread cookies made with a small handful of ingredients. These are perfect with a cup or coffee or tea

Ingredients

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 egg
  • 4 tbsp butter, melted
  • 1/4 cup classic monk fruit sweetener
  • 1 tsp vanilla extract or powder
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/4 tsp xanthan gum (improves texture but optional)
  • 1/3 cup chopped walnuts

Instructions

  1. Start by combining flour, sugar, salt, baking powder and xanthan gum in a bowl by whisking it together.
  2. Then, crack in one egg, add vanilla, and melted butter. Give it a good mix form a thick cookie dough.
  3. Lastly, mix in the nuts.
  4. Form the cookie dough into a log and wrap in plastic wrap. Set it in the fridge for at least 1 hour before baking.
  5. When baking, remove the dough and cut into desired thickness.
  6. Place cookies onto a sheet tray line with parchment paper and bake at 350F for about 15 minutes. I like them a but more crispy on the edges so bake a few more minutes if that is what you want as well.
  7. Cool and enjoy.
