- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder

- 2 ripe avocados, mashed
- 1 cup granulated sugar, I am using maple sugar
- 3 eggs
- 1 teaspoon vanilla extract

- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another large bowl, mash the avocados until smooth. Add maple sugar and mix well.
- Add in the eggs, and vanilla extract. Whisk until fully combined and creamy.
- Gradually fold in the dry ingredients until just combined—avoid overmixing to keep the loaf light and tender.
- Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
