Ingredients

  • 1 egg
  • 1/2 cup plain yogurt
  • 1/4 cup milk of choice
  • 2 tbsp olive oil or melted butter, can also use melted coconut oil
  • 1 tsp vanilla extract or powder
  • 1/2 cup coconut sugar
  • 1 cup all purpose flour, gluten-free or regular
  • 1/4 tsp salt
  • 1 tsp baking powder
  • Tiny marshmallows
  • 1/4 cup chocolate chips
  • Melted chocolate
  • Crushed candy cane, optional if you like the taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 6-cavity donut pan with nonstick spray or lightly oil it.
  2. In a medium bowl, whisk together the egg, yogurt, milk, olive oil or butter, vanilla extract, and coconut sugar until smooth and well combined.
  3. Mix in the flour, salt, and baking powder.
  4. Fold in the chocolate chips and some mini marshmallows.
  5. Spoon the batter evenly into the donut pan, filling each cavity about 3/4 full. Smooth the tops with a spoon or spatula if needed.
  6. Bake for 12–15 minutes, or until the donuts are set and a toothpick inserted into the center comes out clean. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. Once cooled, dip the donuts in the melted chocolate, top with tiny marshmallows, and sprinkle crushed candy cane on top for a festive touch.
  8. These donuts are perfect served warm or at room temperature. Store leftovers in an airtight container for up to 2 days.
