Parmesan Crusted Chipotle Chicken Panini

Parmesan Crusted Chipotle Chicken Panini

This panini is cheesy, crunchy, and full of flavor. It's simple and absolutely delicious.

Ingredients

  • 2 slices bread of choice
  • 2 tbsp. mayo
  • 1/2 tbsp sauce from a can of adobo peppers, more or less depending how spicy you want it.
  • 2 slices of cooked crispy bacon
  • About 3 oz cooked shredded chicken. Can also use sliced chicken.
  • 2 slices of tomato
  • Few small slices of cheddar cheese
  • About 1/2 cup shredded parmesan cheese for frying

Instructions

  1. Make the chipotle sauce by combining mayo and some sauce from a can of adobo peppers, give a good mix. Taste for more spice, add more adobo sauce if needed.
  2. Add the chipotle mayo generously on both slices of bread.
  3. To one slice of bread, add chicken, bacon, tomatoes, and cheese and add the top layer of bread.
  4. To a pan on medium heat, add some of the parmesan cheese.
  5. Add the panini on top and cook for about 3 minutes until the cheese gets melted and caramelized. Press down on the panini often.
  6. Using a spatula, pick up the panini, add more parmesan cheese and flip over the sandwich on the other side.
  7. Cook again until cheese is caramelized and the cheddar cheese inside is nice and melted.
  8. Remove from pan, cut in half, pair with your favorite chips, and enjoy!
