These bagels are an easy twist on the classic cinnamon raisin bagels that we all love. They are made gluten-free and using an air fryer for an easy breakfast.

Ingredients

  • 1/4 cup raisins
  • 1 large or 2 small ripe bananas
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1 cup gluten-free self rising flour

  • 1 cup gluten-free all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. In a small bowl, add raisins and cover them in boiling water. Let them soak on the side while you make the bagel dough.
  2. To a bowl, add two small or one large ripe bananas and mash them well with the backside of a fork or something similar.
  3. Then, add a tsp of vanilla and cinnamon to the mashed bananas and incorporate well.
  4. Add in the self-rising flour. Mix the batter until crumbly, then transfer dough onto a floured surface, flour your hands and start to work the dough until flour and mashed bananas are all combined and you are able to make a smooth ball shape. It is important to know that the dough will be very sticky at first. Flour on hands helps and make sure to flour the surface and the dough as needed.
  5. Form a ball shape, slightly flatten it and add the soaked raisins. Then, fold it again a few time to incorporate the raisins.
  6. Make a smooth ball again and separate it into flour equal pieces. Roll each section of dough into a ball, then flatten it, make an open circle in the middle and form it into a bagel shape as best as you can. They don’t have to be perfect!
  7. Preheat air fryer to 350F for at least 5 minutes. Do not overcrowd the pan. Leave room between each bagel because they do get larger.
  8. Spray some avocado oil on top of each bagel and air fryer at 350F for 7 minutes or until golden brown. Once cooked, rest them for a few minutes, then slice horizontally and enjoy with cream cheese, jam, or your favorite spread.
  9. You can also toast these in the air fryer for a couple minutes after slicing to have a crispy toasted bagel.
