Sticky Tortilla Cinnamon Roll Bites

These easy sticky tortilla cinnamon roll bites are an easy way to use left over tortillas. They are inspired by the traditional cinnamon rolls. They are delicious, sticky, and so so good!
Ingredients
- 3-4 tortillas, I am using gluten-free one here.
- 2-3 tbsp coconut oil, melted
- 1/4 cup coconut sugar, can sub with any other granulated sugar.
- 1 tbsp ground cinnamon
- 1/4 cup or so chopped pecans
Instructions
- Preheat oven to 350F and line a muffin tin with cupcake liners. Set aside.
- In a small bowl, mix together coconut sugar and cinnamon and also melt coconut oil.
- Lay one tortilla down, brush it with oil and sprinkle on a layer of cinnamon sugar.
- Add the second tortilla and repeat the process until all three or four tortillas are brushed with oil and covered in cinnamon sugar.
- Roll the tortillas into a log, holding firm. Cut into about 1 1/2 inch or so pinwheels.
- Grab the muffin tin, brush some coco oil in each cupcake liner and add chopped pecans. Lay the tortilla pinwheels down and bake for about 20 minutes.
- Once baked, cool for 5 minutes and then grab each cinnamon roll with the cupcake liner and flip it over. Dab each bottom of the cupcake liner to loosen up the nuts and remove the liner.
- Drizzle on icing (powdered sugar mixed w/ water) and enjoy!
