Low Carb Higher Protein Avocado Brownies

These brownies are rich, moist, chocolatey, and so good without the guilt. They are gluten-free, low in carb, and higher in protein thanks to the blended cottage cheese.
Ingredients
- 1 avocado, ripe enough to mash
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup of monk fruit sweetener
- 1 tbsp coconut oil, softened
- 1/2 cup cottage cheese, blended
- 1/4 cup fine almond flour
- 1/4 cup chocolate protein plain, low carb/sugar one (keto friendly)
- 3 tbsp unsweetened cocoa powder
- pinch of salt
- 1 tsp baking soda
- 1 cup sugar-free chocolate chips + for more topping
Instructions
- Preheat oven to 350F (180C) and line a square baking dish with parchment paper. Set aside.
- To a large bowl, add an avocado and mash it well.
- Then, crack in two eggs, add vanilla, sugar, coconut oil, and blended cottage cheese. Whisk well.
- To the same bowl, add almond flour, protein powder, cacao powder, salt, baking soda, and mix to incorporate well.
- Add chocolate chips and fold them.
- Transfer brownie batter to the lined baking dish. Top with a handful more of chocolate chips and get it into the oven.
- Bake 25-30 minutes, or until a toothpick inserted in the center comes out clean. Edges should be slight crispy, center should be nice and spongy.
- Rest for 5 minutes, slice into squares, and enjoy.
- Store these in an air tight container in the fridge up to 3-5 days.
- NOTE: you can sub cottage cheese with plain greek yogurt or a dairy free yogurt alternative.
