Mini Cinnamon Sugar Swirl Banana Muffins

Simple, healthy, moist muffins perfect for breakfast or a snack.
Ingredients
- 3 small ripe banana
- 2 eggs
- 1/4 cup maple or coconut sugar
- 1/4 butter, melted
- 1 tsp vanilla extract
- 1 cup gluten-free or regular all purpose flour
- 2 tsp baking powder
- pinch of salt
Cinnamon Sugar Slurry
- 1 tsp cinnamon
- 3 tbsp coconut sugar
- splash of water
Instructions
- Start by preheating the oven to 350F and set your muffin tin aside.
- To a bowl, add bananas and mash them well.
- Then, add the eggs, sugar, butter, and vanilla. Give it a good whisk.
- Add in the flour, baking powder, and salt. Mix to for a your muffin batter.
- Transfer batter into the muffin tin, filling to the top.
- Make cinnamon sugar slurry by combining cinnamon and coconut sugar with a touch of water until a thicker but runny slurry forms.
- Add some slurry to the tops of each muffin and gently swirl it in.
- Bake mini muffins for 15 minutes. If making regular size muffins, bake for 20-25 minutes.
