Ingredients

  • 3 small ripe banana
  • 2 eggs
  • 1/4 cup maple or coconut sugar
  • 1/4 butter, melted
  • 1 tsp vanilla extract
  • 1 cup gluten-free or regular all purpose flour
  • 2 tsp baking powder
  • pinch of salt
Cinnamon Sugar Slurry
  • 1 tsp cinnamon
  • 3 tbsp coconut sugar
  • splash of water

Instructions

  1. Start by preheating the oven to 350F and set your muffin tin aside.
  2. To a bowl, add bananas and mash them well.
  3. Then, add the eggs, sugar, butter, and vanilla. Give it a good whisk.
  4. Add in the flour, baking powder, and salt. Mix to for a your muffin batter.
  5. Transfer batter into the muffin tin, filling to the top.
  6. Make cinnamon sugar slurry by combining cinnamon and coconut sugar with a touch of water until a thicker but runny slurry forms.
  7. Add some slurry to the tops of each muffin and gently swirl it in.
  8. Bake mini muffins for 15 minutes. If making regular size muffins, bake for 20-25 minutes.
