Ingredients

For the Topping
  • 1 tbsp coconut oil or butter, melted
  • 1/4 cup brown sugar
  • Zest of 1 Sumo Citrus
  • 1 Sumo Citrus, peeled and sliced into equal thin slices
For the Cake
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup plain Greek yogurt
  • 1/4 cup Sumo Citrus juice
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and grease a 9-inch round cake pan.
  2. Pour melted coconut oil or butter into the bottom of the pan and sprinkle with brown sugar and Sumo Citrus zest.
  3. Arrange Sumo Citrus slices in a single layer over the sugar mixture.
  4. In a large bowl, whisk together all-purpose flour, brown sugar, baking powder, cinnamon, and salt.
  5. In another bowl, whisk eggs, Greek yogurt, Sumo Citrus juice, applesauce, and vanilla until smooth.
  6. Gradually mix the wet ingredients into the dry ingredients until just combined.
  7. Pour the batter over the Sumo Citrus slices and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool for 10 minutes, then carefully invert onto a plate.
