Citrus Upside-Down Cake

Ingredients
- 1 tbsp coconut oil or butter, melted
- 1/4 cup brown sugar
- Zest of 1 Sumo Citrus
- 1 Sumo Citrus, peeled and sliced into equal thin slices
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1/3 cup plain Greek yogurt
- 1/4 cup Sumo Citrus juice
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F and grease a 9-inch round cake pan.
- Pour melted coconut oil or butter into the bottom of the pan and sprinkle with brown sugar and Sumo Citrus zest.
- Arrange Sumo Citrus slices in a single layer over the sugar mixture.
- In a large bowl, whisk together all-purpose flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, Greek yogurt, Sumo Citrus juice, applesauce, and vanilla until smooth.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter over the Sumo Citrus slices and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes, then carefully invert onto a plate.
