This simple healthy pancake recipe is gluten-free and fun kid favorite breakfast idea. You can freeze the batter into cubes for an easy no fuss breakfast throughout the week.

Ingredients

  • 2 eggs
  • 4 tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup milk of choice
  • 1.5 cups almond flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1/4 cup sprinkles of choice

Instructions

  1. To a bowl, add eggs, maple syrup, vanilla, milk and give it a good whisk.
  2. Then, add in the almond flour, baking powder, and salt. Mix to incorporate
  3. Fold in the sprinkles.
  4. If freezing, add batter to the ice cube tray, you may need two trays here for this recipe. Cover and freeze until ready to use.
  5. When cooking these, remove how ever many you want from the freezer. Add some cooking spray onto a pan and cook on low-medium heat for about 3 minutes per side. Press down on them to make sure no runny batter is coming present.
  6. Store in the freezer up to six months. Enjoy!
  7. Note: Once frozen, remove batter cubes and place into a freezer bag so that the ice trays open up for different use or for more pancakes :)
