Almond Flour Funfetti Pancakes

This simple healthy pancake recipe is gluten-free and fun kid favorite breakfast idea. You can freeze the batter into cubes for an easy no fuss breakfast throughout the week.
Ingredients
- 2 eggs
- 4 tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 cup milk of choice
- 1.5 cups almond flour
- 1 tsp baking powder
- Pinch of salt
- 1/4 cup sprinkles of choice
Instructions
- To a bowl, add eggs, maple syrup, vanilla, milk and give it a good whisk.
- Then, add in the almond flour, baking powder, and salt. Mix to incorporate
- Fold in the sprinkles.
- If freezing, add batter to the ice cube tray, you may need two trays here for this recipe. Cover and freeze until ready to use.
- When cooking these, remove how ever many you want from the freezer. Add some cooking spray onto a pan and cook on low-medium heat for about 3 minutes per side. Press down on them to make sure no runny batter is coming present.
- Store in the freezer up to six months. Enjoy!
- Note: Once frozen, remove batter cubes and place into a freezer bag so that the ice trays open up for different use or for more pancakes :)
