This is an easy breakfast made in under 25 minutes. You really just need to make the batter and the oven will do the rest. It is so versatile. You can play around with different toppings and make this to your liking. My family devour this. It is so so good!

Cinnamon Apple German Pancake

Cinnamon Apple German Pancake

This is an easy, minimal effort breakfast ready in under 25 minutes. It's versatile and so so good.

Ingredients

  • 2 eggs
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup milk of choice
  • 1/2 cup flour. I used a gf all-purpose flour blend here.
  • Pinch of salt
  • 1 tsp ground cinnamon
  • Half of a fresh apple, sliced thinly
  • 1 tbsp coconut sugar and a bit more cinnamon for topping
  • 2 tbsp butter

Instructions

  1. Set oven to 400F and place a 10inch cast iron in the oven while it is preheating. If using a larger cast iron, double the recipe.
  2. Make the batter by whisking eggs, milk, maple syrup, and vanilla.
  3. Then add in the flour along with salt, and cinnamon. Mix to incorporate the flour.
  4. Once oven is preheated, reduce the temp to 350F and take out the pan. Add butter and spread it around. The pan should be hot and the butter should melt.
  5. Pour the batter into the pan. Spread it evenly.
  6. Top it with apple slices, more cinnamon, and coconut sugar.
  7. Get it into the oven and bake for 20 minutes.
  8. DO NOT open the oven during this time so no moisture escapes. The more moisture, the more puffed up it’ll be.
  9. Add powdered sugar on top, slice and enjoy for an easy breakfast any day of the week!
