GLUTEN + DAIRY FREE CINNAMON APPLE FRENCH TOAST BAKE
When thinking of breakfast, French toast seems to always come to mind. French toast is just such a breakfast classic that kids and adults absolutely love. This French toast bake is a family favorite in our house hold. It is loaded with juicy apples, cinnamon, and that soft baked French toast bread is the best part. It is really more like eating dessert for breakfast I think. I make this using regular gluten free bread and almond milk to make it dairy free. Adjust this recipe according to your diet.

make sure to soak the bread for at least 30 minutes to 1 hour before baking. If using gluten free bread, this is even more crucial because this type of bread is a lot more dense.

Gluten + Dairy Free Cinnamon Apple French Toast Bake
Ingredients
- 2 small apples peeled and cubed
- 1/2 tbsp. coconut sugar
- 1/2 tbsp. maple syrup
- 1 tsp cinnamon
- 4-5 slices of gluten free bread. Use regular bread if not gluten free
- 2 pasture raised eggs
- 1/3 cup almond milk
- 1 tsp vanilla
- 1 tbsp. maple syrup
- 1 tsp. cinnamon
Instructions
- Start by peeling and cube apples. Add the apples to a bowl. Sprinkle on coconut sugar, add maple syrup, and cinnamon. Mix and place in the fridge until you are ready to bake.
- In a separate bowl, add eggs, vanilla, cinnamon, maple syrup, and almond milk. Whisk to combine.
- Cut the bread slices into big cube like chunks. Add those to the egg mixture. Mix well to coat the bread. Cover and place in the fridge for at least 30 minutes.
- Preheat oven to 385F and spray or line an 8x8 baking dish with parchment paper.
- Get the apples and bread out of the fridge and gently toss the bread with the cubed apples. Transfer that into the prepared dish.
- Bake for 25-30 minutes. Top with powdered sugar, maple butter or syrup, and dig in!
Notes:
- Make sure to soak bread in egg mixture for at least 30 minutes to 1 hour. Because gluten free bread is much more dense, it needs to absorb the liquid as much as possible.
- You can make the mixture the night before and store it in the fridge. Bake it the next morning!
