  • 1/2 tbsp. maple syrup
  • 1 tsp cinnamon
For the French Toast

Instructions

  1. Start by peeling and cube apples. Add the apples to a bowl. Sprinkle on coconut sugar, add maple syrup, and cinnamon. Mix and place in the fridge until you are ready to bake.
  2. In a separate bowl, add eggs, vanilla, cinnamon, maple syrup, and almond milk. Whisk to combine.
  3. Cut the bread slices into big cube like chunks. Add those to the egg mixture. Mix well to coat the bread. Cover and place in the fridge for at least 30 minutes.
  4. Preheat oven to 385F and spray or line an 8x8 baking dish with parchment paper.
  5. Get the apples and bread out of the fridge and gently toss the bread with the cubed apples. Transfer that into the prepared dish.
  6. Bake for 25-30 minutes. Top with powdered sugar, maple butter or syrup, and dig in!

Notes:

  • Make sure to soak bread in egg mixture for at least 30 minutes to 1 hour. Because gluten free bread is much more dense, it needs to absorb the liquid as much as possible.
  • You can make the mixture the night before and store it in the fridge. Bake it the next morning!
  • Pair this with maple butter or syrup, more apples, fruit, or cinnamon sugar.
