healthy gluten free chocolate chip mini loafs
Little pastries in the morning with a cup of coffee has been my favorite combination for years. These little chocolate chips loafs are just perfect for that. They are not too sweet, they have the perfect texture, and are very delicious, healthy, and simple to make. They are made using all gluten free flours, are dairy free, and refined sugar free. Lets not forget how adorable these little loafs are as well. No mini loaf pan? Do not worry, I have including the baking time for a regular size loaf as well!
tips for making this recipe
When batter is all combined, make sure to let it sit for 2-3 minutes before transferring it into the loaf pan to bake. The almond flour needs to hydrate.
You can also stir in dairy free chocolate chips into the batter. Feel free to use any kind of chocolate chip. White chocolate sounds amazing as well!
Make sure to adjust your baking time according to your loaf pan. If using mini, your are going to bake about 10 minutes less than the regular size loaf pan.
Gluten Free Chocolate Chip Mini Loafs
Ingredients
- 3 pasture raised eggs
- 2 tbsp. melted coconut oil
- 1/4 cup apple sauce
- 1 tsp vanilla
- 1/4 cup coconut sugar
- 2 tbsp. maple syrup
- 1.5 cups almond flour
- 1/4 cup tapioca flour
- 2 tbsp. coconut flour
- 1 tsp baking powder
- pinch of salt
- 1 tsp. cinnamon
- 1/4 cup dairy free chocolate chips
Instructions
- Start by preheating oven to 350°F and line a mini or a regular loaf pan parchment paper.
- In a large bowl, whisk eggs, apple sauce, melted coconut oil, vanilla, maple syrup, and coconut sugar.
- Add in the dry ingredients (almond, tapioca, coconut flour, baking powder, salt, and cinnamon. Mix to incorporate.
- Transfer batter to prepared pan. Top with dairy free chocolate chips.
- Bake for 25 minutes for mini loafs and about 30-35 minutes for a regular loaf. Make sure toothpick comes out clean when inserted in the middle.
- Cool for 5 minutes and enjoy!
