Creamy Mac + Cheese gluten and lactose free
Creamy, delicious mac and cheese made in under 20 minutes? That is my type of meal! This dish comes together so quickly and is very simple to make. It is gluten free with the use of gluten free pasta and flour. It is lactose free because the only cheese used here is parmesan. Parmesan is usually almost always lactose free because of the way it is made, so it works great here with the addition of nutritional yeast if you have a dairy intolerance like myself. This mac and cheese is a great side or main entrée.

This creamy mac and cheese is simple to make and is so satisfying. It is perfect main or side dish. It is also gluten and lactose free.
Ingredients
- 8 oz. dry elbow gluten free pasta
- 4 tbsp. gluten free all-purpose flour
- 2 cups almond milk
- salt + pepper to taste
- 4 tbsp. nutritional yeast plus more for topping
- 1/4 cup of shredded or grated parmesan
- 1/4 cup of Italian or panko bread crumbs
Instructions
- Boil your pasta according to package instructions. Drain and set aside.
- In a large pan, add gluten free flour with only 1/2 cup of the almond milk to start. Whisk well and then keep adding the almond milk a half a cup a time until a thick roux forms. Keep whisking to get all the flour clumps out. Season with salt and pepper to taste.
- To a blender, add the thick roux, nutritional yeast, and parmesan cheese. Blend until creamy. Taste the sauce for more seasoning.
- Pour the sauce to an 8x8 baking dish and toss in the pasta with the sauce. Top that with some more nutritional yeast and bread crumbs.
- Broil in the oven on high for about 5-7 minutes. Watch carefully so that the breadcrumbs do not burn. You just want it to be golden and crispy on top.
- Serve as a side or a main dish entrée. This dish is also perfect for thanksgiving.
