These gluten-free cookies are made with natural sweeteners and almond flour, making them a healthier alternative to traditional chocolate chip cookies.

Ingredients

  • 1/2 cup unsalted butter (about 8 tbsp), softened
  • 1/2 cup coconut sugar
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips of choice

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter, coconut sugar, and honey or maple syrup until well combined.
  3. Beat in the eggs, one at a time, until incorporated. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the almond flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients, mixing until a thick cookie dough forms.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
  7. Using a cookie scoop or spoon, portion out large balls of dough and place them onto the prepared baking sheet, leaving enough space between each cookie for spreading.
  8. Gently flatten each cookie dough ball with the palm of your hand to to help spread when baking.
  9. Add a few more chocolate chips on top of each cookie and some sea salt if preferred.
  10. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges and set in the center.
  11. Remove the baking sheet from the oven and allow the cookies to cool.
  12. Once cooled, enjoy your healthier jumbo chocolate chip cookies as a guilt-free treat!
