Jumbo Chocolate Chip Cookies | Gluten Free

These gluten-free cookies are made with natural sweeteners and almond flour, making them a healthier alternative to traditional chocolate chip cookies.
Ingredients
- 1/2 cup unsalted butter (about 8 tbsp), softened
- 1/2 cup coconut sugar
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips of choice
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened butter, coconut sugar, and honey or maple syrup until well combined.
- Beat in the eggs, one at a time, until incorporated. Stir in the vanilla extract.
- In a separate bowl, whisk together the almond flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients, mixing until a thick cookie dough forms.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, portion out large balls of dough and place them onto the prepared baking sheet, leaving enough space between each cookie for spreading.
- Gently flatten each cookie dough ball with the palm of your hand to to help spread when baking.
- Add a few more chocolate chips on top of each cookie and some sea salt if preferred.
- Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges and set in the center.
- Remove the baking sheet from the oven and allow the cookies to cool.
