LOW CARB + GF BUFFALO CHICKEN SANDWICH

Juicy, tender chicken thighs smothered in a delicious healthy buffalo sauce and ranch, this sandwich is a dream come true. Anything buffalo and I am there so this sandwich definitely makes my mouth water. It is so easy to make and beyond delicious. It is low carb when paired with the cauliflower thins and is made using the best in class ingredients.

WHAT YOU WILL NEED

  • grilled or backed chicken thigh. You can use chicken breast as well. I prefer the thigh.

  • 2 slices of cauliflower thins. The brand I love is Outer Aisle.

  • handful of shredded iceberg lettuce

  • 1/4 cup of buffalo sauce. My favorite is Primal Kitchen due to its clean ingredient list such as avocado oil.

  • 1 tbsp. ranch dressing. I use the one from Primal Kitchen as well.

Juicy chicken smothered with healthy buffalo and ranch in between low carb cauliflower thins, this sandwich is worth the drooling.

Ingredients

  • - 1 grilled or baked chicken thigh. Can use breast too.
  • - 2 slices of cauli thins
  • - handful shredded lettuce
  • - 1/4 cup Buffalo sauce
  • - 1 tbsp ranch

Instructions

  1. Start by cooking the chicken until no longer pink and internal temperature reaches at least 165F. 
  2. Heat the buffalo sauce in the microwave or on the stove until warm. Coat chicken in the sauce on both sides. 
  3. Assemble the sandwich by adding a layer of shredded lettuce on two toasted cauliflower thins. Then add the buffalo chicken and drizzle on some ranch. Slice of tomato would be delicious here as well. Enjoy :)
