hearty chicken meatball soup
Yield: 6-8
cozy soup that is perfect for the whole family.
Ingredients
- Half of an onion chopped
- 4-5 stalks of celery diced
- 3-4 carrots peeled and diced
- 1 zucchini diced
- 2-3 cloves garlic finely minced
- 1 tbsp olive oil
- 3-4 red potatoes or potatoes of choice, peeled and diced
- 1 package of chicken thighs. About 5 thighs
- 1 egg (if you are grinding the chicken)
- 1/2 cup gf elbow noodles or pasta of choice
- 1/3 cup rice. I did white rice
- 2 chicken bullion cubes
- 8-9 cups of water or chicken broth is you’re not using the chicken bullion cubes.
- Handful chopped parsley
Instructions
- Start by prepping all your veggies. I like to cut mine up small because my young kids eat this too.
- For the chicken meatballs, I use a meat grinder to grind up chicken thighs because are they more fatty and flavorful. Ground chicken at the store will be more dry but you can use that if you’d like. Alternately, you can just cut the chicken thighs up in small pieces to add to the soup later on as well.
- If using the grinder, grind up the chicken to a bowl and then crack one egg in the mixture along with some salt and Pepper and give it a good mix and set aside.
- To a large soup pot, add a tbsp of olive oil. Add in the onion, celery, carrots, and zucchini. Mix and cook until vegetables are softer, about 3-4 minutes. Mix frequently.
- Add in the garlic and cook for a minute until fragrant.
- Add in the potatoes and mix everything up.
- Pour in the water or chicken broth. If using water, then add in the chicken bullion at this stage as well. Bring to a boil, then reduce to a simmer.
- When simmering, scoop the ground chicken mixture into the soup. About 1 inch in size little meatballs. I use use a spoon, they don’t have to be perfect. Or you can cut the chicken into small pieces and add it in as well.
- Add rice, mix, cover, and simmer about 25-30 minutes.
- Once soup is almost done, add pasta and cook according to package instructions until al dente.
- Once pasta is done, stir in some chopped parsley.
- Taste for seasoning, add pepper and more chicken bouillon If needed.
- Serve and enjoy!
