GF sausage, egg, and cheese freezer burritos
Busy mornings can be made easier with the help of these freezer burritos. Meal prep these in bulk and have them whenever you are short on time. They are delicious and so versatile. You can add other meats such as ham or bacon or different veggies to your liking. Wrap them up well in plastic wrap to avoid freezer burn. Store these for up to three months in the freezer and heat them up when needed using a microwave, air fryer or the oven. Enjoy :)

meal prep these for a quick breakfast on those busy mornings.
Ingredients
- 6 eggs
- 8 oz turkey sausage roll. You can use whatever breakfast sausage you want here. I tried staying on the lower in the fat route.
- 1 yellow bell pepper diced
- 1 orange bell pepper diced
- Half of an onion chopped
- Handful of chopped spinach
- Salt, pepper to taste
- 8 gf tortilla. Use regular or your favorite brand
- 1 cup shredded cheddar cheese or other cheese you like
- 1/2 tbsp extra virgin olive oil for cooking
Instructions
- To a large pan on medium heat, add some olive oil and add in the prepped bell peppers and onions. Sauté until soft and translucent.
- Make room in the pan, and add the turkey sausage. Crumble it up and cook until cooked through. Mix everything together well.
- Season with salt and pepper to taste and add a handful of chopped spinach. Mix until spinach has wilted down.
- In a bowl, whisk 6 eggs well and pour that onto the veggie and sausage mixture.
- Cook and stir frequently until eggs are cooked through. It’ll take a few minutes! Once done, remove from heat. Do not over cook the eggs. Let them cool a bit before wrapping them up.
- Lay tortilla on a flat surface and add about 1/2 cup of mixture to the center. Roll it up like a burrito and then wrap it up in some plastic wrap. Wrap them well to prevent freezer burn.
- Store these in the freezer for up to 3 months and reheat as needed.
- To reheat, you can microwave, air fry, or heat them in the oven. Enjoy!
