When in need of a perfect little muffin on the go, this gluten free banana muffins are it. They are kid and adult friendly and are so simply to make. They come together with ingredients that you may already have in your fridge and pantry. Add other fruits or veggies to the batter such as shredded carrots or zucchini to up these in nutrition even more. Meal prep these in bulk and store in an air tight container in the fridge for up to a week. Enjoy!
GF banana muffins

these muffins are a perfect meal prep idea to have on hand during the week. They are kid friendly and are very delicious
Ingredients
- 2 large ripe bananas
- 1/4 cup melted coconut oil or melted butter
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 large egg
- Pinch of salt
- 1.5 cup gf all purpose flour
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350F and line a muffin tin with liners.
- To a bowl, add bananas and mash them well. Then, add the egg, maple syrup, melted coconut oil, and vanilla and whisk well.
- To the same bowl, add flour, salt, and baking powder and mix until flour is incorporated. Do not over mix.
- Transfer batter into lined muffin tin. Fill 3/4 way to the top.
- Bake these for 30-35 minutes until golden brown and tooth pick comes out clean when inserted in the center of the muffin.
- Add frosting if you’d like for a delicious cupcake or just enjoy as is.
- Store these in an air tight container for up for a week in the fridge. Ward them up if needed. Enjoy!
