an easy, family-friendly weeknight dinner that comes together in under 25 minutes. You can add whatever vegetables you would like in here and switch out the beef for turkey or chicken. The options are endless here. Enjoy!

an easy, gluten free, family-friendly weeknight dinner that comes together in under 25 minutes
Ingredients
- Half an onion chopped
- 1 bell pepper diced
- 1 zucchini diced
- Handful chopped mushrooms optional. I ran out but I love adding them in this dish
- 2-3 cloves of garlic finely minced
- Handful of spinach roughly chopped
- 1-1.25lb ground beef. I used 90/10. Can also do ground turkey or chicken.
- Spices, salt, pepper, garlic powder, Italian seasoning
- Half jar of your favorite pasta sauce. I did the four cheese
- 3 tbsp grated parmesan cheese
- Small handful chopped parsley
- 3-4 russet potatoes peeled and cut into roughly 1 inch round discs
- Some olive oil for cooking and brushing the potatoes
Instructions
- Start by peeling potatoes and cutting them into discs. Add them to salted water and boil until fork tender. Then remove from water and set aside.
- In the meantime, heat a large skillet with some olive oil. Once hot, add in chopped onions, bell peppers, zucchini, and mushrooms. Cook until soft.
- Add in the minced garlic and give it a stir. Cook for a minute until garlic is fragrant.
- Add the the beef and crumble it up well. Add spices and cook until no longer pink.
- Add in the pasta sauce, stir and add in the chopped spinach. Cook until sauce is bubbly and spinach has wilted down and remove from heat.
- Then, add the boiled potato discs flat on top of the meat mixture. Brush on some olive oil and add grated parmesan and chopped parsley.
- Broil this in the oven until cheese is bubbly and golden brown. About 3-4 minutes.
- Serve and enjoy!
