Gluten-free chocolate chip pancake donuts

Who doesn’t like donuts? This recipe is perfect for kids that are more picky with their food. You can add other toppings such as nuts, coconut, fruit, etc. They are fluffy and so good. I love this recipe and you will too!

Ingredients

  • 1 pasture raised egg
  • 1 tsp pure vanilla extract
  • 2 tbsp pure maple syrup
  • 1/4 cup plant or regular dairy milk
  • 1 tsp baking powder
  • 1/2 cup gf all purpose flour
  • Toppings such as chocolate chips. You can also do any fruit, nuts, sprinkles, etc.

Instructions

  1. Preheat oven to 350F and spray a donut pan with non stick spray. Set that aside.
  2. To a bowl, whisk together egg, vanilla, maple syrup, and milk. Then add baking powder and gf flour. Whisk to form a pancake batter.
  3. You can either stir in your toppings into the batter or add them on top once in the donut pan like I did.
  4. Transfer batter into the donut pan using a spoon, smooth it out nicely.
  5. Add toppings if you did not mix them into the batter.
  6. Bake for 12-15 minutes until puffy and golden brown.
  7. Dust with powdered sugar, serve with maple syrup or jam or just as it. Enjoy!
