Crispy Ravioli Beef Skillet

Easy, gluten-free weeknight dinner made in under 20 minutes.
Ingredients
- 1 bell pepper diced
- 1 zucchini diced
- Handful of mushrooms roughly chopped
- 3-4 cloves of garlic finely minced
- 1 tbsp extra virgin olive oil for cooking + brushing at the end
- 1 lb ground beef. I used 90/10
- Pinch of salt
- Few cracks of pepper
- 1 tsp garlic powder
- 1 1/2 - 2 cups favorite pasta sauce
- 2 tbsp grated parmesan + 1 tbsp for the end
- Handful chopped parsley
- 1 package boiled ravioli. I used large gf cheese ravioli. It was about 10 large pieces
Instructions
- Start by setting ravioli to boil. Cook until al dente according to package instructions. Drain and set aside once done.
- To a large oven safe pan, add a tbsp of olive oil and add diced bell peppers, zucchini, and mushrooms. Cook until soft and translucent.
- Add in the garlic and cook until fragrant.
- Add in ground beef to the pan and break it up. season with salt, pepper, garlic powder. Cook until no longer and pour in pasta sauce. mix.
- Add grated parmesan and some chopped parsley (save some for garnish at the end). Mix everything together.
- Top the meat mixture with the boiled ravioli. Brush ravioli with olive oil, add a pinch of salt, sprinkle on more grated parmesan and chopped parsley.
- Place entire oven safe pan under the broiler in your oven for about 5 minutes until ravioli is crispy. Serve with garlic bread and enjoy!
