Chopped Mediterranean Salad Pizza

A beautiful, vibrant summer salad on top of delicious cauliflower crust pizza. This recipe is a perfect summer lunch or dinner that will wow you and your guests.
Ingredients
- 1 cauliflower crust pizza, I am using the Margherita Four Cheese
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 red onion, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- Some tzatziki for topping or dipping
Dressing
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 tsp garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Start by removing from the package and cook in a preheated oven according to the instructions.
- In the meantime, in a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, and parsley.
- In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, garlic powder, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Add crumbled feta on top and set aside.
- Once pizza is cooked, carefully remove from oven onto a large cutting board or plate.
- Top with a generous amount of the mediterranean salad. Drizzle on some tzatziki, slice and enjoy!
