A beautiful, vibrant summer salad on top of delicious cauliflower crust pizza. This recipe is a perfect summer lunch or dinner that will wow you and your guests.

Ingredients

  • 1 cauliflower crust pizza, I am using the Margherita Four Cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/4 red onion, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • Some tzatziki for topping or dipping
Dressing
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tsp garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Start by removing from the package and cook in a preheated oven according to the instructions.
  2. In the meantime, in a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, and parsley.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, garlic powder, dried oregano, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine all the ingredients.
  5. Add crumbled feta on top and set aside.
  6. Once pizza is cooked, carefully remove from oven onto a large cutting board or plate.
  7. Top with a generous amount of the mediterranean salad. Drizzle on some tzatziki, slice and enjoy!
