Mini Apple Pie Tacos

This super easy recipe is a perfect little sweet treat. The crunchy sweet tortilla paired with juicy apples are amazing.
Ingredients
- 3-4 large tortillas
- 2 tbsp melted coconut oil or butter for non dairy free
- 3 tbsp cinnamon sugar (coconut sugar + cinnamon mixed together)
- 2 medium sized apples, peeled and diced
- 2 tbsp cinnamon sugar (coconut sugar + cinnamon)
- Coconut oil for frying
Instructions
- Start by preheating oven to 350F and set aside a 12 space muffin tin.
- Using something like a mason jar lid or something round, cut equal size mini round discs from each tortilla. You’ll get 3 discs from a normal size tortilla. I saved the scraps to make some tortilla strips for soup.
- Add the mini tortillas to a bowl, pour on melted coconut oil or butter and add cinnamon sugar. Toss everything to get the tortillas coated.
- Grab the muffin tin and flip it over. Assemble the mini tortillas between each muffin cavity so that they stand up and hold its taco shape.
- Bake these about 15-20 minutes, depending on how hard you want the shell to be. Be careful to not burn them/
- Make apple pie mixture by combining diced apples with cinnamon sugar and then cooking them along with coconut oil on medium heat until soft and sticky.
- Once tacos are baked, they’ll hold their shape. Fill each with apple pie mixture. Add some coco whip on top and enjoy!
