These salmon lettuce wraps are an easy lunch or dinner. It is so fresh, vibrant, and delicious.

Ingredients

  • 2 medium size salmon fillets seasoned with salt, pepper, smoked paprika, and lemon pepper
  • 1/4 red onion, diced
  • 3 radishes, grated
  • 2 stalks celery, diced small
  • 2 tbsp finely chopped dill
  • Butter lettuce leaves or other large lettuce wrap leaves, washed and dried.
Lemon Mayo
  • 1/4 cup avocado oil mayo
  • Juice of half a lemon
  • 1 tsp dijon mustard
  • 1 tsp finely chopped garlic
  • Good pinch of salt
  • Few cracks of black pepper

Instructions

  1. Start by removing the skin from the salmon, season, and cook it until desired doneness. I air fried my at 360F for 10 minutes.
  2. To a bowl, add the cooked salmon and slightly flake it.
  3. Then, add diced celery, grated radish, diced red onion, and chopped dill.
  4. In a separate bowl, mix together the lemon mayo. Add about two tbsp of the mayo to the salmon and give it a good mix. Add more mayo of needed. Store the rest of the mayo in the fridge, it so good on sandwiches.
  5. Taste the salmon salad, add some lemon juice if needed. Top with more chopped dill. Grab some lettuce leaves, load them up and enjoy!
