Freezer Friendly Hazelnut Oat Flour Pancakes | Gluten Free

These pancakes are great for meal prep. Freeze the batter in an ice cube tray and have fresh pancakes without the fuss whenever you need a quick breakfast.

Ingredients

  • 2 eggs
  • 3 tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup milk of choice
  • 1.5 cup gluten-free organic oat flour
  • 1 tsp baking powder
  • Pinch of salt
  • Few tbsp chocolate hazelnut spread of choice

Instructions

  1. To a bowl, add eggs, maple syrup, vanilla, milk and give it a good whisk.
  2. Then, add in the oat flour, baking powder, and salt. Mix to incorporate.
  3. Add batter half way to the ice cube tray, you may need two trays here for this recipe. Add some hazelnut spread on the center of each and then cover with more batter. Cover and freeze until ready to use.
  4. When cooking these, remove how ever many you want from the freezer. Add some cooking spray onto a pan and cook on low-medium heat for about 3 minutes per side. Press down on them to make sure no runny batter is coming present.
  5. Store in the freezer up to six months. Enjoy!
  6. Tip: once frozen, remove batter cubes and place into a freezer bag so that the ice trays open up for different use or for more pancakes :)
