Chicken Sausage and Rice One Pot Camping Meal

This one pot camping meal is a family-friendly delicious recipe that requires minimal effort. It's a perfect meal after a long day of adventure.
Ingredients
- 4 chicken sausages of choice, I did Italian
- 1 bell pepper diced, I used green
- Half of an onion, diced
- 1 small zucchini, diced
- 2 cloves garlic, finely minced
- 1 14oz can diced tomatoes
- About 1 cup water, more if needed
- 7oz box of chicken flavored rice, can do plain rice or other flavors. You can find tons of flavors in the rice isle. Just make sure it is uncooked rice.
- Handful of parsley, chopped
- Shredded mozzarella cheese for topping
Instructions
- Cut chicken sausage and prep veggies.
- Add some oil to a medium size pot and add the chicken sausages in. Cook and toss until the sausages have a nice char on them.
- Add in diced bell pepper, onion, and zucchini. Saute for a few minutes until veggies have softened up.
- Add in minced garlic and cook until fragrant. Add in the can of diced tomatoes, water, rice, and seasoning packet that comes with the rice. Mix and cover. Bring to a boil then reduce to a simmer. Add more water if needed.
- Cook until most of the water has evaporated. I like it more liquid-like but you can cook until there is no more liquid left. Simmer about 15 minutes.
- Stir in chopped parsley.
- Serve in a bowl, add shredded mozzarella and more chopped parsley on top. Serve with a bun and dig in!
