Delicious filling rolled in a buttery biscuit dough. These are perfect for the holiday table and super simple to make.

Ingredients

  • 1/2 cup shredded cheese (cheddar, Gruyère, or mozzarella work well)
  • 1/2 cup diced butternut squash, roasted until tender
  • 1/4 cup Revol Greens (romaine, butterleaf, or spring mix), finely chopped
  • 1/4 cup chopped walnuts or pecans (optional, for crunch)
  • 1/4 cup dried cranberries
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • biscuit dough, homemade or store bought
  • 2-3 tablespoons unsalted butter, melted

Instructions

  1. Roast the diced butternut squash in a 400°F (200°C) oven with a bit of olive oil (about 20-25 minutes). Let it cool slightly.
  2. In a large bowl, combine finely chopped greens, roasted butternut squash, cranberries, nuts, cheese, thyme, and rosemary. Give it a gentle toss.
  3. Roll out your biscuit dough into a big rectangular shape and brush it with some melted butter.
  4. Add spoonfuls of the squash mix onto the dough and roll it into a log, like cinnamon rolls.
  5. Slice the log into six equal rolls and place them in a baking dish coated with oil spray.
  6. Bake according to your dough’s instructions (I bake mine at 350F for about 25 minutes), or until the biscuits have puffed up and are golden brown.
  7. Once baked, brush the tops with some more melted butter and enjoy!
