Chicken Shawarma Kebab Lettuce Boats

A tasty, simple low carb meal made with delicious grilled chicken thigh kebabs, a bright salad, and homemade tzatziki.
Ingredients
Chicken Shawarma Kebabs
- 5-6 chicken thighs, cut into chunks
- 1/2 cup plain yogurt
- 2 tbsp olive oil
- juice of 1 lemon
- 2 garlic cloves, finely minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
Mediterranean Salad
- 1 cup cucumber, finely diced
- 1 cup tomatoes, finely diced
- 1 cup bell pepper, finely diced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh fill, chopped
- drizzle olive oil
- juice of half a lemon
- good pinch of salt
Tzatziki
- 1 cup greek yogurt
- 1 cup fresh cucumber, grated
- 1 clove of garlic, finely minced
- 1 tbsp olive oil
- 2 tbsp fresh fill, chopped
- salt, pepper to taste
Instructions
- Start by cutting chicken thighs into large even size chunks and adding that to a bowl along with yogurt and spices.
- Evenly coat the chicken in the yogurt and spices and marinate for at least 30 minutes to 1 hour.
- Once marinated, preheat grill, get chicken chunks tightly on skewers and grill on both sides until internal temp has reached at least 165F. Do not flip them too often so that way they can get a nice char on all sides.
- To make the salad, finely dice veggies and toss them into a bowl along with chopped dill, oil, lemon juice, and salt. Give it a good toss and taste for seasoning.
- For the tzatziki, add yogurt to a bowl along with grated cucumber, garlic, oil, lemon juice, salt and pepper. Give it a good mix. Taste for more salt and add if needed.
- To assemble the lettuce boats, grab a few butter leaf lettuce. I am using Revol Greens Butter Leaf Lettuce here.
- To the center, add some of the mediterranean salad. Top with 2-3 pieces of grilled chicken shawarma kebabs.
- Add some more fresh dill, generous amounts of tzatziki and a squeeze lemon. Enjoy!
