Sweet Cheese Stuffed Crepes | DF GF

Sweet cheese crepes are a great addition to a breakfast platter and are sure to be a hit with kids. They offer a creamy, sweet filling that pairs wonderfully with fresh fruit and a drizzle of syrup or honey.
Ingredients
Blender Crepes
- 1/2 cup gluten-free all-purpose flour
- 1 cup Milkadamia nut milk
- 1 large eggs
- 1 tablespoon melted vegan butter or coconut oil (plus more for greasing the pan)
Dairy Free Ricotta Cheese Filling
- 1 cup dairy free ricotta cheese -
- 1/4 cup maple syrup (adjust to taste)
- 1 tbsp lemon juice
- 1 tablespoon lemon zest
Instructions
- In a blender, combine the flour, Milkadamia nut milk, eggs, and melted dairy-free butter or coconut oil. Blend until smooth.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the pan and swirl to spread it into a thin layer.
- Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes until golden and cooked through.
- Remove from the pan and repeat with the remaining batter.
- In a mixing bowl, combine the dairy free ricotta cheese, maple syrup, lemon zest and juice. Mix until smooth and well combined.
- Spread a spoonful of the sweet cheese filling down the center of each crepe.
- Fold the crepe over the filling to create a simple fold or roll it up.
- Heat a pan with some oil and cook cooked prepared crepes on both sides until golden and crispy.
- Arrange the filled crepes on a platter. You can garnish with fresh fruit, a sprinkle of powdered sugar, or a drizzle of honey or maple syrup.
