The Best Strawberry Pancakes

This pancake recipe is my all time families favorite breakfast. They are fluffy and bursting with delicious flavor from the fresh strawberries.

Ingredients

  • 2 Eggs
  • 1/2 cup milk of choice
  • 1 tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup plain greek yogurt
  • 1 cup GF or regular all-purpose flour
  • 1 tsp baking powder
  • pinch of salt
  • 1/2 cup chopped fresh strawberries, plus more for topping
  • Drizzle of Lakanto Sugar Free Strawberry Syrup

Instructions

  1. Start by adding eggs, milk, maple syrup, vanilla, and yogurt to a bowl. Whisk well.
  2. To the same bowl, add flour, salt, baking powder and mix to combine.
  3. Finely chop strawberries and add them to the batter. Make sure to save some extra aside for topping.
  4. Heat skillet on medium low heat. Spray some oil or add butter and transfer batter to the hot skillet making round pancakes. Unless you are using a griddle, this may need to be done in batches.
  5. Cook on both sides about 2-3 minutes until golden and brown.
  6. Serve with some more fresh strawberries on top and I love pouring some Lakanto Sugar-Free Strawberry syrup on top. Enjoy!
