Ingredients

  • 1 cup Pitaya Foods frozen aloe vera cubes, thawed and diced
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • Juice of 1 lime
  • 2 tablespoons honey or maple syrup
  • A pinch of salt

Instructions

  1. Thaw the Pitaya Foods frozen aloe vera cubes and drain the liquid.
  2. In a small bowl, whisk together the lime juice, honey (or maple syrup), and a pinch of salt.
  3. In a large salad bowl, combine the diced aloe vera, strawberries, blueberries, raspberries, blackberries, and chopped mint leaves.
  4. Pour the dressing over the salad and gently toss to combine, ensuring all the fruit and aloe vera are coated with the dressing.
  5. Sprinkle the crumbled feta cheese and toasted sliced almonds over the top of the salad.
  6. Serve the salad immediately, or chill it in the refrigerator for about 30 minutes to let the flavors meld.
  7. Storage: This salad is best enjoyed fresh but can be stored in the refrigerator for up to 2 days. If storing, keep the dressing separate and add it just before serving to prevent the berries from becoming too soft.
