Aloe Vera Very Berry Summer Salad

Ingredients
- 1 cup Pitaya Foods frozen aloe vera cubes, thawed and diced
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- Juice of 1 lime
- 2 tablespoons honey or maple syrup
- A pinch of salt
Instructions
- Thaw the Pitaya Foods frozen aloe vera cubes and drain the liquid.
- In a small bowl, whisk together the lime juice, honey (or maple syrup), and a pinch of salt.
- In a large salad bowl, combine the diced aloe vera, strawberries, blueberries, raspberries, blackberries, and chopped mint leaves.
- Pour the dressing over the salad and gently toss to combine, ensuring all the fruit and aloe vera are coated with the dressing.
- Sprinkle the crumbled feta cheese and toasted sliced almonds over the top of the salad.
- Serve the salad immediately, or chill it in the refrigerator for about 30 minutes to let the flavors meld.
- Storage: This salad is best enjoyed fresh but can be stored in the refrigerator for up to 2 days. If storing, keep the dressing separate and add it just before serving to prevent the berries from becoming too soft.
