Blender Blueberry Cottage Cheesecake

This simple cottage cheesecake is spongy, soft, and a perfect higher protein dessert or snack.
Ingredients
- 1 cup full fat cottage cheese
- 1/2 cup greek yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup honey, maple syrup or sweetener of choice
- 1/2 cup gluten-free all purpose flour
- pinch of salt
- 1 tsp baking powder
- 1/2 cup frozen or fresh blueberries
Instructions
- Preheat oven to 350F and set aside a square baking dish lined with parchment paper.
- To a blender add all of the ingredients minus the blueberries and blend until smooth.
- Transfer batter to the baking dish, top with frozen or fresh blueberries and bake 35-40 minutes.
- Rest for 5 minutes, slice, dust with powdered sugar optional and enjoy!
