Freezer Brownie Protein Pancakes | GF Meal Prep
Freezing pancake batter has been a time-saving hack in my house for years. I love being able to take a few frozen portions straight from the freezer to the stove on busy mornings, allowing me to move on to other tasks. They turn out so delicious, and the kids absolutely love them. I even add some protein powder for an extra boost of protein. You can freeze the batter for up to three months!
Of course, you don't have to freeze the batter. You can use this recipe to make pancakes fresh anytime. It’s so good!

Freezer Protein Chocolate Brownie Pancakes | Meal Prep

These pancakes are a great time saving hack for busy mornings. They come out so delicious and the extra protein in there is a plus.
Ingredients
- 1 Egg
- 1 tsp Pure Vanilla Extract
- 1 tbsp Pure Maple Syrup
- 1/2 cup Milk
- 2 tbsp Chocolate Protein Powder
- 1/2 cup GF All-Purpose Flour
- 2 tbsp Cocoa Powder
- Pinch of Salt
- 1 tsp Baking Powder
- 1/4 cup Mini Chocolate Chips
Instructions
- To prepare the batter, start by whisking together eggs, vanilla, maple syrup, and milk.
- Then, add in the dry ingredients (protein powder, cocoa powder, flour, salt, baking powder) and whisk until a smooth pancake batter forms.
- Transfer batter into a clean ice cube tray. I use a pretty small silicone one that makes smaller size pancakes. But you can use a large one too.
- Cover and freeze. Once frozen you can remove all the frozen pancakes and transfer them into a freezer bag and reuse the ice cube tray if needed.
- Cook these on low-medium heat, for about 2-3 minutes per sides. Make sure to gently press down on them while starting to melt to help them spread a little.
- Remember, the bigger the ice cube the longer they will cook so I aim for a smaller ice cube tray so that my pancakes cook pretty fast. Enjoy!
