Freezer Protein Chocolate Brownie Pancakes | Meal Prep

Ingredients
- 1 egg
- 1 tsp pure vanilla extract
- 1 tbsp pure maple syrup
- 1/2 cup milk of choice
- 2 tbsp Chocolate Protein Powder
- 1/2 cup GF All-Purpose Flour
- 2 tbsp Cocoa Powder
- Pinch of salt
- 1 tsp baking powder
- 1/4 cup mini Chocolate Chips
Instructions
- In a mixing bowl, whisk together the eggs, vanilla extract, maple syrup, and milk until well combined.
- Add the dry ingredients—protein powder, cocoa powder, flour, salt, and baking powder—then whisk until a smooth batter forms.
- Pour the batter into an ice cube tray. A small silicone tray works best for bite-sized pancakes, but a larger tray can also be used.
- Cover and freeze until solid. Once frozen, pop out the pancake cubes and transfer them to a freezer bag for storage.
- To cook, place the frozen cubes on a pan over low-medium heat, cooking for 2-3 minutes per side. Gently press them down as they begin to melt to help them spread.
