Chicken Stuffed Tortilla Pockets

These have been my go-to lately—so juicy, flavorful, and incredibly easy to make! Perfect for a quick meal or snack.

Ingredients

  • 2 cups ground chicken thighs or breast, (see notes)
  • 1/2 white onion, finely chopped
  • Small handful of parsley, chopped
  • Pinch of salt & pepper
  • 2 tbsp water
  • 4 tortillas (medium/large size)
  • 1 egg (for egg wash)

Instructions

  1. In a bowl, combine the ground chicken, grated onion, chopped parsley, salt, pepper, and water. Mix until well combined.
  2. Lay a tortilla flat and spoon the chicken filling onto one half, leaving space around the edges.
  3. Beat the egg and brush the egg wash around the entire edge of the tortilla.
  4. Fold the tortilla in half to form a moon shape. Press the edges firmly with your fingers, then seal further using the back of a fork to ensure no juices escape during baking.
  5. Place the stuffed tortillas on a parchment-lined baking sheet.
  6. Brush the tops generously with egg wash.
  7. Bake in a preheated oven at 355°F (180°C) for 20 minutes or until golden and cooked through.
  8. Serve with your favorite sauce or try mixing equal parts mayo and ketchup with 1/4 tsp garlic powder for a delicious dip. Enjoy!

Notes

For this recipe, I prefer using ground chicken thighs because they have a richer flavor. I grind the chicken thighs myself using a meat grinder. If you don’t have a grinder or can’t find ground chicken thighs, ground chicken breast is a good alternative—though it may turn out slightly less juicy.
