Ingredients

  • 1 large or 2 small ripe avocados (mashed until smooth)
  • 2 eggs
  • 1/4 cup monk fruit sweetener
  • 1 tsp vanilla extract
  • 1/4 cup melted butter (cooled slightly)
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • 1/4 cup no-sugar-added chocolate chips (plus more for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or grease it lightly.
  2. In a mixing bowl, mash the avocado until smooth (or use a food processor for a creamier texture). Add the eggs, monk fruit sweetener, vanilla extract, and melted butter. Mix until fully combined.
  3. In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients. Stir until the batter is smooth and well combined. Gently fold in the no-sugar-added chocolate chips.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Top with additional chocolate chips, if desired.
