Ingredients
- 1 large or 2 small ripe avocados (mashed until smooth)
- 2 eggs
- 1/4 cup monk fruit sweetener
- 1 tsp vanilla extract
- 1/4 cup melted butter (cooled slightly)
- 1/2 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- Pinch of salt
- 1/4 cup no-sugar-added chocolate chips (plus more for topping, optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or grease it lightly.
- In a mixing bowl, mash the avocado until smooth (or use a food processor for a creamier texture). Add the eggs, monk fruit sweetener, vanilla extract, and melted butter. Mix until fully combined.
- In a separate bowl, whisk together almond flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the wet ingredients. Stir until the batter is smooth and well combined. Gently fold in the no-sugar-added chocolate chips.
- Pour the batter into the prepared baking pan, spreading it evenly. Top with additional chocolate chips, if desired.
