High Protein Cinnamon Raisin Bread | GF
Ingredients
- 450 grams farmer cheese
- 3 eggs
- 1 cup gluten-free rolled oats
- 1 cup raisins
- 1/2 cup chopped walnuts or your favorite nuts
- 1 tsp salt
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 4 tbsp coconut sugar
- 1 tsp cinnamon
- Splash of water
Instructions
- Start by preheating oven to 350F (180C) and line a loaf pan with some parchment paper. Set aside.
- To a large bowl, add farmer cheese and using a masher gently mash it into finer crumbs if your farmer cheese is super crumbly.
- Crack in three eggs and mix to combine.
- Add in the oats, raisins, chopped nuts, sunflower seeds, cinnamon, salt, and baking powder and mix it to combine. It will form a thick dough.
- Transfer batter into the prepared loaf pan. Flatten it well and make sure to spread it well into each corner.
- Make cinnamon sugar slurry by combining coconut sugar, cinnamon, and a touch of water until a creamy slurry forms. Do not add too much water, it will be too thin. Add a little bit of water at a time.
- Drizzle the slurry on top of the bread generously.
- Bake bread for 45-50 minutes.
- Cool for a 10 minutes before slicing and enjoy with butter, jam, etc.
