These pancakes are a great time saving hack for busy mornings. They come out so delicious and the extra protein in there is a plus.

  1. To prepare the batter, start by whisking together eggs, vanilla, maple syrup, and milk.
  2. Then, add in the dry ingredients (protein powder, cocoa powder, flour, salt, baking powder) and whisk until a smooth pancake batter forms.
  3. Transfer batter into a clean ice cube tray. I use a pretty small silicone one that makes smaller size pancakes. But you can use a large one too.
  4. Cover and freeze. Once frozen you can remove all the frozen pancakes and transfer them into a freezer bag and reuse the ice cube tray if needed.
  5. Cook these on low-medium heat, for about 2-3 minutes per sides. Make sure to gently press down on them while starting to melt to help them spread a little.
  6. Remember, the bigger the ice cube the longer they will cook so I aim for a smaller ice cube tray so that my pancakes cook pretty fast. Enjoy!
