gluten + dairy free chia seed banana nut bread

I love making banana bread because it is so simple, perfect for snacking or breakfast, and a perfect way to use up any ripe bananas laying around. My kids can not get enough of it. This recipe is made gluten and dairy free. You can totally make this vegan but swapping out the regular eggs and use flax eggs.

This loaf is moist, full of flavor, and made gluten and dairy free.

Ingredients

  • 2 large or 3 small ripe bananas mashed
  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1.5 cups almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup chopped nuts of choice. I did walnuts and pecans
  • 1 tbsp chia seeds

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a bowl, whisk wet ingredients. Then fold in the dry ingredients.
  3. Chop up some nuts. Add those to the batter along with the chia seeds. Fold to incorporate. Transfer to the loaf pan and add more chopped nuts on top.
  4. Bake for 45-50minutes. Toothpick should come out clean from center.
  5. Cool for 10 minutes and then slice and enjoy!
