Grain free apple blondies

These blondies are a fall favorite in our house. They are so moist and full of flavor. The juicy apple inside the batter and on top paired with the maple butter drizzle makes these irresistible. They are gluten free, dairy free, and have no refined sugar. Enjoy!

Grain Free Apple Blondies

Ingredients

  • 2 pasture raised eggs
  • 1 tsp. pure vanilla extract
  • 1/4 cup melted and cooled coconut oil
  • 1/2 cup coconut sugar
  • 1 1/2 cups almond flour
  • 1 tsp baking soda
  • pinch of salt
  • 1 tsp apple pie spice
  • 1 cup finely diced apples
Cinnamon Apples
  • 1 cup diced apples
  • 2 tbsp coconut sugar
  • 2 tsp cinnamon
  • coconut oil for frying

Instructions

  1. Preheat oven to 350F and line an 8x8 baking dish with parchment paper. Set aside.
  2. First cook your apples for the topping. To a small frying pan add some coconut oil and then add the diced apples along with cinnamon and coconut sugar. Mix to combine and cook stirring occasionally until apples are soft and sticky. About 5 minutes. Set aside once done.
  3. To a bowl, add eggs, vanilla, melted coconut oil, and coconut sugar. Whisk to combine.
  4. Add almond flour, baking soda, salt, and apple pie spice. Mix to incorporate forming a thick batter.
  5. Fold in finely diced apples and transfer batter to the prepared baking dish. Add the cooked apples equally on top of the batter.
  6. Bake for 30-35 minutes until golden brown and toothpick comes out clean from the center.
  7. Once done, cool slightly and drizzle on maple butter. You can also do powdered sugar or your favorite icing.
