These giant cookies are insanely soft, sweet, and will keep you full for hours. They are easy to make and require ingredients that are most likely already in your pantry. These are also gluten, dairy, and refined sugar free. Enjoy friends!

Jumbo Cinnamon Roll Oatmeal Cookies

These jumbo cookies are soft, sweet, and so simple to make. They are gluten free, dairy free, and will keep you full for a long time.

Ingredients

  • 1 pasture raised egg (room temp is best)
  • 1 tsp pure vanilla extract
  • 1/2 cup pure good quality maple syrup
  • 2 tbsp melted coconut oil (slightly cooled)
  • 1 cup organic rolled oats
  • 3/4 cup gluten free all purpose flour
  • 2 tsp. ground cinnamon
  • 1 tsp. baking powder
  • Pinch of salt
Icing
  • 4 tbsp powdered sugar
  • splash of almond milk (you can do any milk or even water) use maple syrup for a maple glaze

Instructions

  1. Start by preheating oven to 325F and set aside a cookie sheet lined with parchment paper.
  2. To a large bowl, add wet ingredients (egg, vanilla, maple syrup, melted coconut oil) and whisk to combine.
  3. Then to the same bowl, add oats, flour, cinnamon, baking powder, and salt. Mix until a thick batter forms.
  4. Using your hands grab a large piece of dough and flatten it on the cookie sheet making four jumbo cookies or you can make many smaller ones. Baking time may vary with different sizes.
  5. Bake for 12-14 minutes until firm and slightly golden on the sides. These will be pretty light in color.
  6. While baking make the icing by mixing together powdered sugar and almond milk until a desired consistency forms. You want it to be thick. Adjust your sugar to liquid ratio if needed.
  7. Cool cookies slightly and then drizzle on the icing. Enjoy!
