This is an easy crowd pleasing appetizer that is so versatile. You can switch up the vegetables that you want to roast or keep it like this recipe because it works SO well with the creamy burrata cheese on top. I love pairing it with some soft, slightly toasted french bread. Cheers!

Roasted Vegetables with Burrata

This is perfect crowd pleasing appetizer that is simple to make and is so versatile.
Ingredients
- 1 zucchini, cut into half moons
- 1 red bell pepper
- 1 cup cheery tomatoes, whole
- 1 tb extra virgin olive oil
- Pinch of salt and pepper
- Pinch Italian seasoning
- Ball of burrata
- Bread of choice
Instructions
- Set oven to preheat at 400F.
- Prep veggies by cutting them similar to the size of cherry tomatoes you’ll be using. Add them to a small baking dish.
- Drizzle on olive oil and add salt, pepper, and Italian seasoning. Give it a good toss.
- Bake for about 25-30 minutes stirring once in the middle. Bake until veggies are soft and slightly caramelized.
- Remove from oven, add burrata on top.
- Serve with toasted bread of choice and dig in.
